Birria Tacos and Quesabirria

The same chile-braised beef, two good ways to serve it: a crisp-edged birria taco, or quesabirria with a little melted cheese. Both come with hot consommé for dipping.

First, make the birria

This is the taco-making companion to our complete Birria de Res recipe. It begins with already cooked beef and its consommé; the stew’s roughly 4½-hour preparation is not included in the 30-minute time here. Set aside the meat, broth, and a little of the red surface fat when making that batch. You can also use properly stored leftovers.

Make the tacos

  1. Warm the birria safely. If starting with chilled birria, bring the consommé to a rolling boil in a saucepan. Reheat the shredded beef with a few spoonfuls of broth until the meat reaches 165°F (74°C) on a food thermometer. Keep the beef and broth hot, and spoon off about 2 teaspoons of the red surface fat for the griddle. If the broth has no fat to spare, use neutral oil instead.
  2. Set up the griddle. Set a large skillet or comal over medium heat. Keep the 2 cups consommé hot in a clean saucepan for dipping at the table. Put the reserved red fat in a small dish with a pastry brush. If the birria has no fat to spare, use neutral oil and brush it thinly on the skillet instead.
  3. Fill and fold. Warm a tortilla for a few seconds until flexible. Brush both sides very lightly with the red fat; do not soak it in broth. Lay it on the griddle. Add about ¼ cup hot beef to one half. For quesabirria, add about 2 tablespoons cheese; for a birria taco, leave the cheese out. Fold the tortilla over the filling.
  4. Griddle in batches. Cook for about 1 to 2 minutes per side, turning carefully, until the tortilla has lightly crisp edges and the optional cheese has melted. Adjust the heat if the chile coating darkens too quickly. Repeat with the remaining tortillas, using only a thin film of fat or oil each time.
  5. Serve hot. Serve two tacos per person with finely diced white onion, cilantro, lime wedges, and the reserved hot consommé in individual cups for dipping.

Keep the tortillas thin, not soggy

Brush on only a film of the red surface fat and save the liquid consommé for dipping after cooking. If a tortilla tears, warm the next one before filling it and use less fat. Cook in batches so the surface stays hot; if the chile coating begins to burn, lower the heat.

Leftovers

Refrigerate cooked birria promptly in shallow containers and use within 3 to 4 days, or freeze it. Bring the broth to a rolling boil and reheat leftover beef to 165°F (74°C) before assembling. Serve the tacos as soon as they come off the griddle; their edges soften in storage. USDA leftover guidance.

Why use the red surface fat?

As the birria settles, its chile-tinted fat rises above the liquid broth. A little of that fat flavors and colors the tortilla on the griddle without making it soggy. Save the clear consommé below for dipping at the table.

Choose your taco

What changes when you add cheese?

Without cheese, the seasoned beef remains the center of the taco. Add a modest layer of Oaxaca or Monterey Jack and let it melt against the beef for quesabirria. Neither version needs a second stew recipe.
