Chorizo & Egg Breakfast Tacos on Flour Tortillas

Ingredients

  • 4 small handmade flour tortillas
  • 4 large eggs
  • 4 ounces fresh Mexican chorizo
  • 1 teaspoon neutral oil, if needed
  • Salt to taste

Method

  1. Cook the fresh chorizo in a skillet over medium heat, breaking it into small pieces, until thoroughly cooked. Drain excess fat if needed.
  2. Beat the eggs. Add them to the skillet and stir gently until fully set. Season to taste.
  3. Warm the tortillas until flexible, fill them with the chorizo and eggs, and serve at once.
