Refried Beans ( Frijoles Refritos )

Ingredients

  • 1 Lb Pinto Beans Raw not canned
  • 2 Quarts Water
  • 1 tbsp Salt
  • 1/2 Cup Shortening

Instructions

  • Cook beans in water slowly. About 1 1/2 hours or until beans are tender
  • Add the salt at the end
  • Heat shortening in a small skillet and add to beans ( if you would like to make them flavorful add bacon drippings )
  • Continue cooking until all the fat is absorbed by the beans. Stir often to prevent from sticking.
  • Add a bit more shortening, about 1 tbsp, in a skillet
  • Mash the beans in the skillet, stirring all the time until the beans have absorbed the shortening. Then remove from heat
