Refried Beans ( Frijoles Refritos )

- 1 Lb Pinto Beans Raw not canned
- 2 Quarts Water
- 1 tbsp Salt
- 1/2 Cup Shortening
Instructions
- Cook beans in water slowly. About 1 1/2 hours or until beans are tender
- Add the salt at the end
- Heat shortening in a small skillet and add to beans ( if you would like to make them flavorful add bacon drippings )
- Continue cooking until all the fat is absorbed by the beans. Stir often to prevent from sticking.
- Add a bit more shortening, about 1 tbsp, in a skillet
- Mash the beans in the skillet, stirring all the time until the beans have absorbed the shortening. Then remove from heat
